Green Chilli and Chicken Soup

Green Chilli and Chicken Soup

I've created this soup for dinner. So yummy that I juz have to share it with you. Nah, it's definitely not Japanese. Whaahaha.. The soup is a little sour because I used the vinegar that soaked the green chili. It's a little spicy too, just a little. Hahah.
Yup. I managed to find green chilli during the summer and soaked them in vinegar. Hehehe.

Serves one or two

Mix and marinate this for 5 to 10 mins:-
1 chicken thigh or half chicken breast, cut into pieces
2 tbsp of oyster sauce
a dash of sesame oil
pepper
1 tbsp of corn starch
1 tbsp of hua diao wine, or any Chinese wine
======

2 cloves of garlic, chopped
50g of green vegetables, xiao bai cai/ spinach/ cai xin
2 tbsp of green chili vinegar with some green chili, of coz.
1 or 2 bowls of water, depends on how much you want
olive oil

Steps:
1. Add olive oil. Heat the pot. Add chopped garlic and stir fry for a minute. Don't brown it!
2. Add marinated chicken. Stir fry.
3. When chicken turns white in colour, it means it's cooked. Add water.
4. Increase heat until soup boils. Then lower the heat and slow boil for 5 mins.
5. Add green chili, green chili vinegar and vegetables. Boil for another 3 mins

Ready to serve!!

It's really yummy! You must try it! HEehehe
